My Mother Helen was a cook. She had the knack for creating the most wonderful tasting food and our family gathered around her table every evening to partake in the dishes she lovingly made for us. Thanks mom this blog is a tribute to you.
Four large sweet potatoes
~Boil until Al dente (the remaining bake time will be in the oven) ~
~Let cool (room temp is fine) ~
~Slice in half (lengthwise) ~
~Preheat oven to 350 degrees ~
~Spray Pam in bottom and sides of casserole dish ~
~Place in casserole dish large enough so sweet potatoes are not overlapping (but they may touch) ~
