Banana Coffee Cake

Cathy's Recipe




Ingredients:

  • 1 (8 oz package cream cheese) softened
  • 1/2 cup butter (1 full stick) softened
  • 1 1/4 cups sugar (dry measuring cup)
  • 2 1/4 cups all purpose flour (dry measuring cup)
  • 2 eggs (large)
  • 1 cup mashed ripe bananas (dry measuring cup)
  • 1 tsp vanilla extract (measuring spoon)
  • 1 1/2 tsps baking powder (measuring spoon)
  • 1/2 tsps baking soda (measuring spoon)

Topping:


  • 1 cup chopped pecans or walnuts (dry measuring cup)
  • 2 tbls sugar (measuring spoon)
  • 1 tsp ground cinnamon (measuring spoon)


Directions:

  • In a mixing bowl. beat the cream cheese, butter and sugar.
  • Add eggs, one at a time, beating well after each addition.
  • Add the bananas and vanilla.
  • Combine flour, baking powder and baking soda; gradually add to the creamed mixture.
  • Combine topping ingredients in seperate bowl.v Add 1/2 of the topping mixture to the batter.
  • Transfer to a greased 13x9 inch baking pan. Sprinkle with remaining topping.
  • Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean.
  • Cool on a wire rack.
