Pumpkin Bread

Cathy's Recipe


"I usually put in a cup of chopped nuts, either walnuts or pecans, before pouring into the prepared pan." Bake as stated.





Ingredients:

  • 2 cups all purpose flour
  • 2 cups sugar
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1 cup veg. oil
  • 4 eggs, slightly beaten
  • 2 cups solid-pack pumpkin puree (not pie filling)



Directions:

  • Heat oven to 350
  • Grease and flour 10 inch tube or bundt pan
  • Sift together flour, sugar, baking soda, cinnamon, cloves, nutmeg and salt into large bowl
  • Make well in center; pour in oil and eggs
  • Beat on low speed until well blended
  • Add pumpkin continue beating until completely mixed in
  • Turn batter into prepared pan
  • Bake for 1 hour at 350°F, or until the top springs back when lightly pressed with a fingertip or wooden pick inserted into the center comes clean
  • Cool cake in pan on wire rack 15 minutes
  • Turn out onto wire rack; invert, Cool
