Dorothy's Recipe

Ingredients:

  • crappie fillets
  • 3-4 eggs beaten
  • 1 cup flour
  • potato chips
  • butter
  • onion powder
  • garlic powder

Directions:

1. Wash crappie filets under cold water. Dry with paper towel.
2. In a bowl beat eggs then dredge fillets in a egg wash.
3. In another bowl lightly dredge the both sides in the flour and shake off excess.
4. Third bowl, put crushed potato chips and roll the fillets in it.
5. After the fillets are covered, sprinkle onion and garlic powder on them.
6. Fry fish in a cast iron pan with melted butter.
7. Cook fillets just for a couple of minutes. Carefully flip with a small spatula.
8. Sauté them on the second side for a few minutes, until the fish flakes break apart with a fork.
9. Tent them with aluminum foil to keep them warm and continue cooking the fish in batches.

Enjoy!
