Nancy’s Recipe
Ingredients:
- 1 cup all-purpose flour, spooned and leveled
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon sea salt
- ½ teaspoon cinnamon
- ½ cup unsalted butter or coconut oil, melted
- ¾ cup packed brown sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 1½ cups whole rolled oats
- ½ cup chopped walnuts
- ¾ cup raisins
Directions:
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a large bowl, mix together the flour, baking soda, baking powder, salt, and cinnamon.
3. In a different bowl, vigorously whisk the melted butter, brown sugar, whole egg, egg yolk, and vanilla together.
4. Combine the wet ingredients with the dry ingredients. Incorporate the oats, raisins, and walnuts, mixing them into a dense batter. Allow the dough to rest for 20 minutes while the oven is preheating.
5. Utilize a 2-tablespoon cookie scoop to portion the dough, ensuring that your scoops are slightly heaped. Gently roll them in slightly damp hands to achieve a round shape. Arrange them on the prepared baking sheets and apply a light pressure on the tops of the dough balls.
6.Bake until they are puffed, golden, and slightly underbaked in appearance, for a duration of 10 to 11 minutes.
7. Allow them to cool on the pans for 5 minutes prior to moving them to a wire rack to cool entirely.
