Ultimate Chocolate Cake Delight

Ingredients:

  • 2 cups all purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder( I use Ghirardelli)
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon espresso powder
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water


Directions:


1. Preheat the oven to 350 degrees Fahrenheit.

2. Prepare two 9-inch round cake pans by either greasing them with butter and dusting with flour or using a non-stick spray.

3. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso. Whisk the ingredients together until they are thoroughly mixed.

4. Next, add milk, vegetable oil, eggs, and vanilla extract to the dry mixture. Mix on medium speed until the ingredients are well incorporated. Then, reduce the speed and carefully add boiling water to the batter, mixing until combined. The batter will be thin, which is acceptable.

5. Evenly divide the batter between the two prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Avoid overbaking. Once done, transfer the cakes to a wire rack to cool.
