The Best Potato Salad Ever!

"This recipe my mother uses for potato salad might be the best ever; everyone in the family loves it." The great thing about it, besides the flavor, is that it is so easy to prepare. "Simple, yes; affordable, yes; and it tastes out of this world!" I recommend it!



Prep Time: 15 Min Cook Time: 45 Min





Ingredients:

  • 3 pounds potatoes (regular white potatoes)
  • 1 medium onion, diced
  • 2-3 hard-boiled eggs for salad
  • 1-2 hard boiled eggs for the top
  • Paprika
  • 1 cup mayo (use real mayo, not salad dressing)


Directions:

  • Clean, peel, and cut potatoes into bite-sized pieces.
  • Boil potatoes until cooked, about 30 to 45 minutes until fork-tender, depending on the size of the cut potatoes.
  • Drain and run cool water over the potatoes to stop the cooking process.
  • Add chopped onions and chopped hard boiled eggs once the mixture has cooled slightly.
  • Gently add mayo and stir until mixed.
  • Slice a hard-boiled egg and put it on top of the dish.
  • Sprinkle paprika on top of sliced hard-boiled eggs.
  • Put the potato in the refrigerator for at least 4–5 hours until it's cold.
