The Best Potato Salad Ever!

Great for Picnics and Family gatherings


  • 3 lbs potatoes

  • (I use regular white potatoes)

  • 1 med onion cut up

  • 2-3 hard boiled eggs for salad

  • 1-2 hard boiled eggs for top

  • Paprika

  • 1 cups mayo

  • (use the real Mayo not salad dressing)

Prep Time: 15 Min
Cook Time: 45 Min

~Clean, peel and cut potatoes into bite size pieces. ~

~Boil potatoes until cooked about 30-45 minutes until fork tender time will depend on the size of the cut potatoes. ~

~Drain and run cool water over potatoes to stop cooking process. ~

~Once cooled down a bit add chopped onions, and chopped hard boiled eggs. ~

~Gently add mayo and stir until mixed. ~

~Slice a hard boil egg and put on top of dish. ~

~Sprinkle Paprika on top of sliced hard boil eggs. ~

~Put potato in refriderator for at least 4-5 hours until cold.
