Cathy's Recipe
"I usually cover this for about 45 minutes while baking and then remove the foil for the last 15 minutes so the cheese gets nice and melted and a little browned."
Ingredients:
- 1 lb lasagna noodles
- 2 lbs ground beef
- 1 32oz jar spaghetti sauce (I use Ragu with green peppers and mushrooms)
- 1 cup cut up onion
- 1 cup cut up green pepper
- 1 lb ricotta cheese
- 2 eggs
- 2-3 cups shredded mozzarella cheese (pizza cheese)
Directions:
- Lasagna noodles should be boiled for 5 minutes and then drained. Put the boiled noodles aside for now.
- Brown the meat in a fry pan along with the onions and peppers; you can season with Italian seasoning if you choose to.
- Drain, add spaghetti sauce, and let simmer for about 30 minutes.
- Meanwhile, put the ricotta cheese in a bowl, add the eggs, and mix well.
- After the meat has simmered, it's time to layer.
You will need a 13x9 pan and then do the following:
- Put a small amount of the meat sauce in the bottom of the pan to keep the noodles from sticking. Sort of like greasing a pan when you bake a cake.
- Next, put a layer of noodles in the pan and top with some meat sauce.
- Lay more noodles on top, and put some of the ricotta cheese and egg mixture on top of that layer.
- Put more noodles on top and layer more meat.
- Do this until all the ingredients have been used up, ending with the meat sauce.
- Put shredded mozzarella cheese on top and bake in a 350 oven for about an hour.
